Honey adds a deep sweetness to butter, that can be subtly altered depending on the type of honey you choose to use, such as those made by bees foraging predominantly one shrub or herbal flower type, such as lavender or acacia.
But of course, combining honey with butter is not recommended if you are watching your calorie intake!
Still, for a delicious treat, you might like to try it if you haven't already, and you may even like to try it with a twist, and indeed, invent your own variation to the classic recipe.

115g /4oz unsalted butter
115g /4oz set honey
Soften the butter and honey in a warm bowl, using a wooden spoon. Serve with scones, toast or rich fruit cake.

Finely grated rind of half an orange
Soften the butter in a warmed bowl, then beat in the orange rind and honey with a wooden spoon until the mixture is smooth and spreadable. Spoon into a pot ready to serve with a rich tea bread or shortbread.
Variation: add chopped hazelnuts, walnuts or almonds.

½ oz set honey
125g/4oz powdered/icing sugar
2 Tablespoons boiling water
3 Tablespoons brandy
Soften
the butter and honey in a warm bowl, using a wooden spoon. Add the
icing sugar, water and brandy. Cream the ingredients together until it
has a soft butter consistency.
Taste and adjust as required.
